Egg Salad Sandwich

Ingredients
For the Egg Salad:
• 6 hard-boiled eggs, peeled and chopped
• 1/4 cup mayonnaise
• 1 tsp Dijon mustard
• 1 tsp lemon juice
• 1 tbsp chopped chives (plus more for garnish)
• Salt and pepper, to taste

For Serving:
• 8 slices of bread (white, wheat, or sourdough)
• Lettuce leaves or baby spinach (optional)
• Extra chives or paprika for garnish

Instructions
1. In a medium bowl, combine chopped eggs, mayonnaise, Dijon mustard, lemon juice, and chives.
2. Mix until creamy and well combined. Season with salt and pepper to taste.
3. Lightly toast the bread slices if you prefer.
4. Spread the egg salad evenly onto 4 slices of bread.
5. Top with lettuce or spinach if using, then close with the remaining bread slices.
6. Slice in half, garnish with extra chives or paprika, and serve immediately.
