°1 1/2 cup bananas, mashed, ripe
°2 teaspoons lemon juice
°3 cups flour
°1 1/2 teaspoons baking soda
°1/4 tsp salt
°3/4 cup butter, softened
°2 1/8 cups sugar
°3 large eggs
°2 teaspoons vanilla
°1 1/2 cup buttermilk
°1/2 cup butter, softened
°1 package (8 ounces) cream cheese, softened
°1 teaspoon vanilla
°3 1/2 cups icing sugar
*How to do it :
1 Preheat oven to 275°F/135C.
2 Greased & flour a 9 * 13 pan.
3 In a small bowl, mix the mashed banana with the lemon juice; put aside.
4 In medium bowl, combine flour, baking soda and salt; put aside.
5 In bowl, cream 3/4 cup butter & 2 1/8 c sugar to light & fluffy.
6 Beat the eggs, one at a time, then stir in 2 teaspoons of vanilla.
7 Add the flour mixture alternately with the buttermilk.
8 Stir in the banana mixture
9 Pour the batter into the prepared pan and bake in the preheated oven for one hour or until a toothpick inserted in the center comes out clean.
10 Remove from the oven and place directly in the freezer for 45 minutes.
11 For frosting, cream the butter & cream cheese to smooth.
12 Stir in 1 teaspoon of vanilla.
13 Add the icing sugar and beat on low speed until smooth, then on high speed until smooth.
14 Spread over cooled cake.
15 Sprinkle chopped walnuts on top of the frosting, if desired (or hearts!)..
