Chocolate Cookie Cheesecake

Ingredients:

2 c chocolate sandwich cookie crumbs

2 tbsp butter, melted

¼ c packed brown sugar

1 tsp ground cinnamon

2 lbs cream cheese, softened

1 ¼ c white sugar

⅓ c heavy whipping cream

2 tbsp all-purpose flour

1 tsp vanilla extract

4 Eggs

1 ½ c chocolate sandwich cookie crumbs

16 oz sour cream

¼ c white sugar

1 tsp vanilla extract

1 c heavy whipping cream

1 ½ c semisweet chocolate chips

1 tsp vanilla extract

Directions:

In a medium mixing bowl, add melted butter, 2 cups of cookie crumbs, brown sugar, cinnamon, and melted butter. Stir until well mixed.

Transfer the mixture into a 10-inch springform pan and press in hard.

Place it inside the oven and bake for about 5 minutes at 350 degrees F. Remove and allow it to cool.

Add cream cheese into a large mixing bowl. Beat until the texture becomes smooth.

Add whipping cream, sugar, vanilla, and flour gradually. Beat every addition.

Add eggs gradually and beat every addition.

Spread 1/3 of the batter into the pan, then spread 1 1/2 cups of the cookie pieces.

Spread the rest of the batter over the cookie pieces.

Place it inside the oven and bake for 45 minutes at 350 degrees F.

Remove the cake from the oven and let it cool for a few minutes.

In a mixing bowl, add 1 tsp of vanilla and 1/4 cup of sugar. Stir until well blended.

Spread the mixture on top of the cake.

Put it back inside the oven and bake for another 7 minutes.

Turn off the oven and let the cake rest inside for another 30 minutes.

Place the cake onto a wire rack to cool for a few minutes.

In a saucepan, add the chocolate chips and 1 cup of whipping cream. Place it on the stove, then stir and allow it to melt.

Add 1 tsp of vanilla and stir until well blended.

Remove from the heat and spread the mixture on top of the cake.

Place it inside the fridge to chill for about 8 hours.

Decorate the cake to your liking.
