Conchitas and tortillas with butter Comfort dinner

Ingredients:

For Tortillas :

1/2cup butter (salted or unsalted)

1cup water

3cups all-purpose flour, plus more for dusting

1teaspoon salt

1tablespoon baking powder

For Conchitas:

1lb ground sirloin  
2 cups uncooked shells  
4 oz tomato sauce  
1/4 small onion chopped  
1/4 bell pepper sliced  
4-5 cups water  
1 beef bullion cube  
1 tsp cumin  
1 tsp chili powder  
1 tsp paprika  
1/4 tsp cayenne pepper (optional)  
1 tsp garlic powder  
1/4 tsp salt  
1/2 tsp pepper  

Directions:

For Tortillas :

In a small pot over medium-high heat, add the butter and water. Mix until the butter is completely melted.

In a medium bowl, combine the flour, salt and baking powder.

Mix in the very warm water with the rest of the ingredients.

Mix the dough until it comes together.

Transfer the dough onto a clean working surface and continue kneading for about 5 minutes or until the dough is nice and smooth.

Place the dough back into the bowl and cover with plastic for 10 to 15 minutes.

Shape the dough into equal-sized rounds, about 1 to 2 inches.

Arrange the rounds on a lightly floured cooking sheet and cover for 10 more minutes.

Preheat your skillet or griddle over medium heat.

Using a rolling pin, shape the dough to a 10- to 12-inch round.

Place on the preheated skillet or griddle for approximately 10 seconds or until you see small bubbles form.

Flip and cook or an additional 15 to 20 seconds.

Flip one last time and cook for 5 to 10 seconds or until your tortillas puffs up.

Place in a tortilla warmer or a kitchen towel to keep them warm and continue with the remaining dough.

Add queso fresco & warm butter to tortillas (optional).

For Conchitas:

Brown beef over medium heat in Dutch oven drain add shells and stir it around a bit let them fry a little with the beef add all remaining seasoning with onions and bell pepper then add tomato sauce and stir , (make sure you break up the bullion cube up and stir it around as it dissolves with the heat) cover with water and simmer for 5 min then cover and simmer for about 10 min until shells are tender and serve.
