Instructions:
1. Prepare the Chicken:
• Season chicken breasts with salt, pepper, and a pinch of paprika.
• Heat 1 tbsp olive oil in a grill pan or skillet over medium heat.
• Cook chicken for 5–6 minutes per side until golden and fully cooked through (internal temp 165°F / 74°C).
• Remove from heat, let it rest for 5 minutes, then slice.
2. Cook the Broccoli:
• Toss broccoli florets with 1 tbsp olive oil, salt, and pepper.
• Grill or sauté for 4–5 minutes until tender but still crisp.
3. Make the Creamy Garlic Sauce:
• In a small bowl, mix together Greek yogurt, minced garlic, lemon juice, parsley, and a little salt & pepper.
4. Assemble the Bowls:
• Add a serving of cooked rice or quinoa to each bowl.
• Top with sliced grilled chicken and broccoli.
• Drizzle with creamy garlic sauce.
