Pickled Beets

Ingredients
• 8 medium fresh beets
• 1 cup vinegar
• 1 cup sugar
• 1 cup water
• 1 tsp salt
• 1 cinnamon stick (optional)
• 3–4 whole cloves (optional)
Instructions
1. Wash beets and trim stems, leaving about 1 inch.
2. Place in a pot, cover with water, and simmer until tender (about 30–40 minutes).
3. Drain, cool slightly, then peel and slice the beets.
4. In a saucepan, combine vinegar, sugar, water, salt, and spices. Bring to a boil.
5. Add sliced beets and simmer for 5 minutes.
6. Transfer to sterilized jars, pour liquid over, seal, and refrigerate.
