Stuffed Pepper Soup takes the classic flavors of stuffed bell peppers and transforms them into a warm, hearty soup. It’s full of savory ground beef, tender bell peppers, tomatoes, and comforting seasonings—perfect for cozy dinners any time of year.

Ingredients:

1 pound ground beef (or turkey for a lighter option)

1 medium onion, chopped

3–4 bell peppers (red, green, or yellow), diced

3 cloves garlic, minced

4 cups beef or vegetable broth

1 (14.5 oz) can diced tomatoes

1 (8 oz) can tomato sauce

1 cup cooked rice (white, brown, or cauliflower rice)

1 teaspoon Italian seasoning

1/2 teaspoon paprika

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for heat)

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions:

1. Cook the Meat and Veggies

1. Heat olive oil in a large pot over medium heat.

2. Add chopped onion and minced garlic; sauté until softened, about 3–4 minutes.

3. Add ground beef and cook until browned, breaking it into small pieces. Drain excess fat if needed.

2. Add Peppers and Seasonings

1. Stir in diced bell peppers and cook for 3–4 minutes until slightly softened.

2. Add Italian seasoning, paprika, salt, black pepper, and red pepper flakes. Stir well.

3. Simmer the Soup

1. Pour in diced tomatoes (with juices), tomato sauce, and broth.

2. Bring to a boil, then reduce heat to low and simmer for 20–25 minutes until the peppers are tender.

3. Stir in cooked rice and simmer for an additional 5 minutes. Adjust seasoning to taste.

4. Serve

1. Ladle hot soup into bowls.

2. Garnish with fresh chopped parsley.

3. Serve with crusty bread or a side salad for a complete meal.

Tips & Variations:

Meat options: Swap ground beef for ground turkey, chicken, or sausage for a different flavor.

Vegetarian version: Omit the meat and add extra beans, lentils, or mushrooms for protein.

Spice it up: Add a pinch of cayenne pepper or hot sauce for extra heat.

Make it creamy: Stir in a splash of heavy cream or coconut milk just before serving for a richer soup.

Meal prep: This soup stores well in the fridge for 3–4 days or freezes beautifully for later meals.
