These Caramelized Oatmeal Raisin Muffins Will Make You Bake Sale Famous

Ingredients:

¼ cup butter

⅔ cup rolled oats

⅔ cup brown sugar, divided

¼ teaspoon ground cinnamon

¼ teaspoon ground allspice

⅔ cup of water

1 ½ cups all-purpose flour

⅓ cup rolled oats

4 teaspoons baking powder

2 teaspoons wheat germ

1 egg, lightly beaten

1 cup evaporated milk

1 ⅓ cups raisins

1 tablespoon all-purpose flour

Directions: 

Step 1: Ready the oven and preheat to 190 degrees C or 375 degrees F.

Step 2: Apply cooking spray in a muffin pan or line it with paper liners.

Step 3: Place a skillet on the stove and turn the heat to medium.

Step 4: Add in the butter and allow it to melt. Add in 2/3 cup of oats, cinnamon, 1/3 cup brown sugar, and allspice. Cook until the color turns brown.

Step 5: Pour in 2/3 cup water and the rest of the 1/3 cup brown sugar. Stir until the sugar is dissolved.

Step 6: Cook until the sauce is slightly thick then remove from the heat.

Step 7: In a large mixing bowl, add in the baking powder, flour, 1/3 cup of uncooked oats, and wheat germ. Whisk until well blended.

Step 8: In a small mixing bowl, add evaporated milk and egg. Whisk until creamy.

Step 9: Create a hole in the middle of the flour mixture and pour in the egg mixture. Combine using your hands until the texture is nice and fluffy.

Step 10: Fold in raisins into the batter then scoop into the prepared muffin cups.

Step 11: Place inside the preheated oven and bake for 25 to 30 minutes or until cooked through.

Step 12: Remove from the oven and let it sit at room temperature to cool.

Step 13: Serve and enjoy!
