°2 c shredded chicken
°1 can green pepper cut into cubes
°1 cup sour cream
°salt and pepper as needed
°2 cups shredded Monterey Jack cheese
°10 corn tortillas (you can use tortilla flour if you prefer)
* instructions:
The first step:
Preheat oven to 400*
Mix chicken, salt, pepper and sour cream in a mixing bowl
The second step:
Put a good spoonful in the center of each tortilla and roll to get the enchiladas.
Place each side seam down on a 9×13 . baking tray
Third step:
When all the tortillas are rolled up and placed in the pan, sprinkle them with green pepper
Sprinkle grated Monterey Jack cheese over the tops of enchiladas
The fourth step:
Bake for 15 minutes
Garnish with chop green onions
Serve hot with a spoonful of Mexican rice
